Whispering Hills was
established in 1985 and was
planted to the noble varieties
of Cabernet Sauvignon, Pinot
Noir, Chardonnay and Riesling.
Total vineyard plantings
consist of 8 acres set within
a natural amphitheatre above
the township of Seville. This
setting influences the wines
by capturing additional warmth
and assisting in the even
ripening of fruit. The
vineyard is planted upon two
different soil types, the grey
soils provide structure to the
wines and the red soils
provide fruit definition and
aroma.
Our Winemaking philosophy is
to enhance the expression of
our site though minimal
handling in the winery,
natural or wild yeast
fermentation, extended
maceration and hand picking.
Oak is given a supportive
role. Hand harvest is seen as
part of a series of harvests
commencing with “green
harvests” prior to full
veraison in order to achieve a
balance between fruit and vine. |
